I certainly got the right room, a junior suite in fact. This room holds a spacious lounge, balcony off the bedroom and views of Hyde Park. Let the room’s natural lighting and views of the city skyline wash over you, this is a beautiful hotel in an extraordinary location.

Windows restaurant is a hive of activity all day. Open for buffet breakfasts and a-la-carte dinner, including private events you will always have sublime views of Hyde Park, contemporary décor matched with a sensational menu, regardless of what time of day you go.

Here you’ll find unpretentious and comforting dishes prepared with local fresh produce, “simple ingredients made just perfect without the complications” says Exec Chef Denny.

I started with the pork belly and gherkin, the spicy aromas of the cucumber confit, coriander, soy and ginger braise instantly suggested I’d chosen well. The meat fell apart in my mouth while the fat on the pork belly crisped up beautifully.

You can’t go wrong with ordering kangaroo as a main course. It was cooked to a perfect pink (medium rare – any more cooked than that is sacrilege) . The sumac relish and accompanying kipler potatoes offered a little tartness to contrast with the sweet, apple & sage jelly that was served with the steak.

For dessert I had the Frangelico scented panacotta. When I asked Executive Chef Denny for the inspiration behind this he cited the aesthetics of the dish as an essential component.
“Visual presentation is as important as paint to an artwork,” he says.

It comes served in a tumbler glass, layered with beds of rhubarb, berries and edible flowers. This creates a quasi-truffle look about it, but sweet in flavour and the Frangelico is present. Only the taste of the dish outweighed its looks. A definite highlight to end the evening.

The Indonesian-born chef grew up in a house filled with spices and aroma, curious to the many green leafy vegetables and how each ingredient served a purpose when it all comes together. Having gained such great experiences from his mentors over the years, Denny felt it was time to do his own flavour and bring it to the table. Rising up to the main kitchen with Marriott hotels and now Executive Chef, he continues to be inspired by Chef Ambassador for Pullman, Justin North.

With every season a new menu is created and a strong brigade backing Denny, Windows restaurant has my vote. Expect a more cosmopolitan dining experience as it caters to corporate lunches, inspired shared platters and seasonal produce.

I’m confident foodies alike will rejoice in the refreshing taste and textures put to the table in at Windows.
